Allspice is also known as Jamaica pepper, English pepper, myrtle pepper, newspice, pimenta or pimento. Allspice is the dried unripe berries (also called the fruit) of Pimenta dioica. The pimento tree is indigenous to the Caribbean Islands and is the only spice grown solely in the Western Hemisphere. There are three tropical spices native to the Western Hemisphere (the other two are chile peppers and vanilla) but chile peppers and vanilla can also be grown in other parts of the world. The fruit is picked when unripe and green, and is then dried in the sun. Once dried, they're brown in color and resemble large peppercorns.
We are often asked the question "what are the ingredients in Allspice?"
The name may be misleading, but Ground Allspice is just pure ground Jamaican Allspice Berries. Allspice is an individual spice, not a blend with various ingredients.
The pimento tree was first discovered in Jamaica around the year 1500 and has been cultivated and used for cooking ever since. The tree was discovered by Spanish explorers who named the tree “pimento” after the Spanish word meaning peppercorn.
Much of the world's allspice is harvested from Jamaica, but Guatemala, Honduras and Mexico are also significant producers. The Jamaican grown allspice berries are the most clove-like and are considered the highest quality. They’re picked by hand from cultivated trees, while berries grown in other countries are typically harvested from wild trees. Our top grade Allspice Berries are grown in Jamaica. Beware of other spice suppliers who only list their Allspice as Allspice Berries or Ground Allspice and not “Jamaican” Allspice. If they are getting their allspice from Jamaica they’ll make a bigger deal about it!
Jamaican grown Allspice also has the highest oil content (typically between 4% - 5%) and are more uniform in appearance than berries grown in other countries. Whole allspice berries have a longer shelf life than ground allspice and when freshly ground, are very aromatic. We grind our allspice in small batches several times a week for maximum freshness and flavor. With a high volatile oil content the flavor will dissipate the longer the berries are in their ground form.
The name “allspice” was given to this spice by the English in the early 1600’s who thought it combined the flavors of cinnamon, cloves and nutmeg (with just a hint of pepper as well).
Allspice is one of the most important ingredients of Caribbean cuisine. It’s used in Jamaican jerk seasoning (and wood from the Pimento tree is used to smoke jerk in Jamaica), in moles and in pickling. In Middle Eastern cuisine allspice is a key ingredient, especially in the Levant (the eastern Mediterranean region that consists of Cyprus, Israel, Jordan, Lebanon, Palestine, Syria and southern Turkey), where it is used to season a variety of meat dishes and stews. In the U.S., allspice is most commonly found in desserts, but it’s also responsible for giving Cincinnati-style chili its distinctive aroma and flavor.
Allspice pairs well with eggplant, most fruit, pumpkins, root vegetables, sweet potatoes and squash.
Allspice also works well in combination with chili powder, cloves, coriander, garlic, ginger, dry mustard powder, pepper, rosemary and thyme.
Allspice has a warm, pungent taste and the aroma of cloves with sweeter, floral background notes. Its flavor has a hint of cinnamon, mace and nutmeg with peppery overtones.
If you have a recipe that calls for Allspice and need a substitute you can combine 1/4 teaspoon cinnamon and 1/2 teaspoon ground cloves.
For handy Allspice conversions use: 5 Whole Allspice Berries = 1 teaspoon Ground Allspice or 1 oz whole Allspice is equal to 4 1/2 tablespoons ground Allspice.
