Celtic Sea Salt is also known as Sel Gris Sea Salt or French Grey Sea Salt Salt and has become increasingly popular in the mainstream culinary world in the last few years, with many salt aficionados believing that it is the best quality salt available. Grey salt is considered an unrefined "moist" sea salt containing approximately 13 percent residual moisture.It is typically found in French Atlantic coast region of Brittany. It's light grey color is a natural occurring process of the minerals being absorbed from the clay lining the salt ponds.
The Brittany region is known for the marshes and low lying areas ideally suited for salt fields. To cultivate Sel Gris, salt farmers push or pull the salt across the bottom of a salt evaporation pond. The bottom of this pond may be composed of clay, sand, concrete or even tile. While moving the salt on a daily or weekly basis, the salt farmers must make sure to not penetrate the bottom of the pond which would result in the contamination of the salt.
Celtic Sea Salt can be used as either a cooking salt or finishing salt because of its size and texture. Unlike other finishing salts, Sel Gris will not pull the moisture from food, like Kosher salt which is used to absorb animal liquids.
