Dried mushrooms, which can be found growing in the wild or commercially cultivated, are some of the more flavorful ingredients found in many kitchens around the world, During the last decade or so it seems that the availability of different types of dried mushrooms in the U.S. has exploded. The beauty of dried mushrooms is not only are they incredibly delicious but you don’t need to add a great deal of them in any dish for optimum flavor. While mushrooms aren’t considered a meat or a vegetable, to many mushroom aficionados they’re often referred to as the "meat" of the vegetable world.
For almost as long as man has been a hunter and gatherer mushrooms have been picked and eaten (of course knowing what constituted an edible mushroom vs a poisonous one took a good deal of trial and error). Even though mushrooms have been consumed for thousands of years they weren't really mentioned in cook books until the late 1700's when they became popularized by the French. Naturally we were a bit late to the culinary party and didn’t really cook with them prior to the late 19th century. Today mushrooms are pervasive in numerous cuisines - especially in China, Europe (but not England – they tend to be haters of the mushrooms), Japan and Korea.
Dried mushrooms may seem a bit expensive when compared to fresh side-by-side. But in actuality they’re very economical. The drying process intensifies mushrooms flavor as it takes approximately 8 lbs of fresh mushrooms to produce just 1 lb of dried mushrooms. Experienced cooks understand not only the value but the flexibility that dried mushrooms add to their cooking arsenal.

Where to Use
Add dried mushrooms to beef recipes, braising liquids, casseroles, gravy, pasta, rice, simmering sauces, soups, stews, stir-fries, stocks, stuffings and risottos when you’re looking for more body and flavor complexity. We also like to add these to the top of seafood dishes and steak.

Are Mushrooms Vegetables?
We’ve gotten this question multiple times and no mushrooms are not vegetables. Mushrooms have a different nutritional profile than vegetables or fruits but scientific research has shown that mushrooms possess a wide variety of essential antioxidants and nutrients.
If you decide to make your own “mushroom broth” strain the liquid through a coffee filter or paper towel. This helps catch the grit that naturally falls to the bottom of the soaking dish.
